Modern Epicurean, owned and operated by Carmen Pauna out of Old Town Fort Collins, Colorado, helps farmers, ranchers, and artisans thrive by supporting their efforts to sell fresh, small batch, and high quality local food at scale. Carmen's expertise is in building strong and everlasting relationships with local food producers and connecting them with chefs and restauranteurs in order to use their ingredients to their full potential and ultimately increase revenue.
Carmen has over ten years of industry experience in kitchens at several of Fort Collins top restaurants including Sonny Lubick Steakhouse, Austin's American Grill, and The Kitchen Restaurant Group. Starting as a pantry cook she moved her way up into managing kitchens. Inspired by the Local Food Movement and Slow Food Movement during her college years at Colorado State University the seed was planted to start a business that would be a part of the change our food system desperately needs. After several years of planning, Carmen transitioned out of the kitchens, never too far though, to pursue her passion of working more closely with local purveyors. Modern Epicurean became official in April of 2018 and has a network of resources from connections with local producers to chefs across the country. The mission of this company is to help bridge the gap in the food supply chain to bring your customers the best end product, support our local economy and agriculture, and raise your bottom line.
